This week we have had a busy week. We started our week by going on vacation to Valentine, NE. It was a blast. We then came home and had a couple of lazy days with a little bit of school work here and there.

Sunday

We skipped out on church at home (shh!) and went on our family vacation. We had two stops to make on our way to Valentine, NE. We first stopped at Sin City Grill in Grande Island, NE. This was the best breakfast for lunch I have had in a long time! It was soo good. I ordered their biggest breakfast with the intentions of sharing with D. He ended up eating about half of it! That boy can put away some food! We then went on and had a snack at Bonfire Grill & Pub in Broken Bow, NE. This was delicious too! Both of these stops are on the Nebraska Passport for 2020 and were hits with us and the kids.

We ended up getting into Valentine around dinner time so after checking in at the hotel we headed off to dinner. We found this great restaurant called Bunkhouse Restaurant and Saloon. It was really good. After dinner we all went to bed!

Monday

This was our big day. We first headed off to Smith Falls State Park where we hiked up to Smith Falls. This is the tallest waterfall in Nebraska. It was a lot of fun. We all got in the water at the bottom of the falls and boy was it cold! We only got pictures of C going in the second time by herself (we stepped away to let another family come down after we had played a bit the first time-social distancing)! She did not want to leave!

We then headed over to the Valentine Bridge on the Cowboy Trail. This is the bridge that used to be a train bridge over the Niobrara River. They have restored it to be a multi use trail, but it is still HIGH!! I don’t like bridges over water, so this was a stretch for me to walk over it. BUT it was fun! C had a blast and had to walk the entire length of the bridge. I only walked out about 3/4 of the way over the bridge just the edge of the water.

We then went back and grabbed Subway for lunch and went back to the room for NAPS!! Daddy had to do some work so he went downstairs, but the three of us stayed upstairs and all finally fell asleep.

After naps, we went to play in the hotel pool. Now, C hates pools. Last summer we could only get her to go into baby pools. She refused the big pools. But this year she would at least sit and play on the steps. This is a big deal! After the pool, we headed back out to dinner. We ended up at Peppermill Restaurant & Lounge. It was amazing! I had a chicken bacon ranch sandwich and it was so good. Daddy had the Turf and Turf and could not finish it! C had her first French Dip sandwich and actually really liked it. D had chicken strips and ate all of them (as usual).

Tuesday

We headed home, but not before we stopped and got coffee at Auntie D’s Gift and Coffee Shop (another Passport stop). The coffee was really good. And off we went back home. We did stop two more times, once for lunch at Sandstone Grill in Burwell, NE (super good) and Fort Hartsuff State Historical Park (another Passport stop). For Hartsuff was a lot of fun. They had all the buildings closed right now because of COVID19, but we could still look in most of the buildings and see different historical items. C acted like she could see in, but I don’t know for sure. It was a quick, but very fun and educational stop on our way home. We got home right before dinner so we picked up dinner and everyone went to bed early!

Wednesday

We kinda sat around today because Mommy had a rebound headache from taking medicine too much. We bought a new coffee pot and picked it up today. Our old and trusty coffee pot broke right as we were leaving out fo town. We love our new combo coffee pot. We also did a little bit of our school work which was some worksheets from SuperTeacherWorksheets.com. Check out my review in a couple of weeks of how we have been using this in our daily curriculum. We also did an art lesson from our ARTistic Pursuits curriculum book. Read my review here. I made an amazing Instant Pot recipe: Instant Pot Turkey-Stuffed Peppers Recipe from Cookinglight.com. They were really good. I made a double recipe but only 6 peppers (instead of doubling to 8). This made it fit perfectly in the Pressure Cooker I have and I had extras to cook on the stove for the kids. C had hers in a taco and D threw his on the floor (sounds about right)!

Thursday

We had another relaxed day, but did more worksheets from SuperTeacherWorksheets.com. I also let them do water table in the morning because it was only in the 80s! (This is much cooler than it has been). We also worked on our letter friends crafts for the letter B. I am letting D go through the alphabet and so both of the kids are working on their crafts. I have to really sit with D because sometimes he likes to eat the eyes (I fished it out in time). But other than that he loves it! Friday

We had a very lazy day. It was hot outside so we stayed inside all day. We didn’t even do school work! The kids just played in the morning while my husband and I watched the news and game shows. C played with her Barbies for a bit on the table. We then turned on VBS music videos and then Biblestories. C played in the playroom a lot by herself while her daddy worked down there. She loves this because it is special since D doesn’t get to go down there with her.

This weekend we are going to clean and unpack from our trip. I have a lot of blogging and work on my products that needs to happen. Hope you have a great weekend too!
